6'8", all legs (3 total).

:I'm 6'3", and it's extremely hard to get my legs to fit in by the pedals. When I do get the seat adjusted right for my legs, my arms are not positioned the right distance from the steering wheel.
:I'm just wondering if you have this type of problem, or know anyone that does, and what the proper way to deal with it would be.

for proper driving position, I seat myself in my car, and move the seat forward roughly 4 or 5 inches.
this is compounded by the fact I have a 4 point roll cage and harness.
and the seat is leaned as verticle as possible.

with my old setup, my helmet was severely impeeded by the t-tops. I used to run with out ttops, but many organizations wont let me do that in my usual run groups (instructor).
with my new setup, I did a two things while having my interior reupholstered by interior gods ImportsExtreme.com
1. deleted drivers powered seat, replaced with passangers manual seat. (this alone lowered my seat by 2 inches probably)
2. remove 2 of the 4 springs underneat the padding on the new drivers manual seat.

those two major changes allowed me to wear my helmet, in the proper driving position with my TTtops installed. I cannot wait to see how much Charles Parks CarbonFiber ttops will cost. That is almost a must have mod, price exclusive.

:Can you heel/toe downshift in your Z? I assume you would have to... but with the length of my legs and size of my feet I don't think it's possible for me. Any alternatives?

I generally don't heel and toe. For the type/style of driving I do (lazy but purposeful), I don't see a need to heel toe. I do however, usually use left foot brakeing for trail braking or setting up a turn in for when i just need to tap and go.
(I also do not let students heel and toe while I am instructing. we can cover the same material with out having to throw in heel and toeing.)
